People in the past few days have been buzzing about Mermaid Toast (especially after BuzzFeed covered it). My friend and I both agreed that it probably doesn’t taste much different from normal cream cheese on toast. According to eater.com, “The colorful spread is a mixture of blue-green algae powders and almond milk cream cheese, and it looks like Waugh added some flecks of gold leaf for an extra bit of visual pop.”
I find it interesting that people are drawn to “art-like” or aesthetically pleasing food and are willing to pay more for such food. More people appreciate art (in a different form) than I thought, I guess. 🙂
